Instructions
- Cut spinach in half.
- Separate stems from leaves.
- Hold bottoms in water for 30 seconds, then place stems in boiling water.
- Cook for 3-4 minutes.
- Place in cold water.
- Place leaves in boiling water.
- Cook for 1-2 minutes, remove when the color changes.
- Place in cold water.
- Strain water with hands and create bundles.
- Cut spinach into 1” pieces.
- Roast 4 tablespoon of sesame seeds on medium high heat, remove when color changes.
- Grind sesame seeds.
- Add 2 tablespoon of soy sauce and 2 tablespoon of mirin to sesame seeds.
- Combine sesame mixture with the spinach.
- Serve.
