Agedashi Tofu or deep fried tofu is a very popular dish in Japanese cuisine. And it has come to be known as one of the best tofu recipe around the world at many Japanese restaurants. The lightly fried tofu can be served in several ways. The most common being with ground daikon, ginger, green onion, and a dashi based sauce.

Ingredients
- 1 package Firm tofu
- Pinch of Salt
- 1 tablespoon Flour
- 1 tablespoon Potato Starch
- Oil
- ½ cup Dashi
- 1 tablespoon Mirin
- 1 tablespoon Soy Sauce
- ¼ cup Daikon Ground
- 1 teaspoon Ginger
- 1 teaspoon Bonito
- 1 teaspoon Green Onion
Alternate version
- 4 Shishito Peppers
- Pinch of Ichimi Togarashi Chili Pepper
- 1 teaspoon Daikon
Instructions
- Carefully cut tofu into 8 pieces in hand.
- Place pieces on paper towel.
- Lightly salt tofu on both sides
- Let tofu sit for 15 minutes.
- Combine 1 tablespoon of flour and 1 tablespoon of potato starch.
- Coat all sides of tofu in mixture.
- Heat 2” of oil in a pot to 350° and fry tofu.
- Don’t move until surface hardens.
- Remove when all sides are crispy.
- In a pot combine ½ cup of dashi, 1 tablespoon of mirin, and 1 tablespoon of soy sauce.
- Heat until it begins to boil.
- Grind ¼ cup of daikon and remove excess liquid.
- Grind 1 teaspoon ginger.
- Plate with daikon, ginger, green onion, bonito, and sauce to taste.
Alternate version
- Fry shishito peppers for 5 seconds.
- Serve with pepper, daikon, ginger, ichimi togarashi, and sauce.
