Carefully cut tofu into 8 pieces in hand.
Place pieces on paper towel.
Lightly salt tofu on both sides
Let tofu sit for 15 minutes.
Combine 1 tablespoon of flour and 1 tablespoon of potato starch.
Coat all sides of tofu in mixture.
Heat 2” of oil in a pot to 350° and fry tofu.
Don’t move until surface hardens.
Remove when all sides are crispy.
In a pot combine ½ cup of dashi, 1 tablespoon of mirin, and 1 tablespoon of soy sauce.
Heat until it begins to boil.
Grind ¼ cup of daikon and remove excess liquid.
Grind 1 teaspoon ginger.
Plate with daikon, ginger, green onion, bonito, and sauce to taste.
