Accordion Cucumber
This simple yet captivating Japanese dish turns ordinary cucumbers into a unique treat. The special cutting method adds an intriguing texture and allows the cucumber to soak up delicious sauces and seasonings.

Cut all cucumbers at a 30° angle between chopsticks, do not cut through the cucumber all the way.
Turn the cumber over and repeat.
Cut off the ends of cucumber and cut into 1” pieces.
Combine 1 ½ tablespoon of vinegar, 1 tablespoon of sugar, 1 ½ tablespoon of soy sauce, ½ tablespoon of sesame oil, and 1 teaspoon of chili bean sauce.
Plate cucumbers and pour on sauce mixture.
Garnish with green onion slices.
Serve
