Today we will share our delicious Ebi Mayo recipe with you. Ebi Mayo (えびマヨ) is a popular Japanese dish made with shrimp in mayo sauce. It combines a creamy Japanese mayonnaise sauce with the succulent texture of shrimp. This well-known dish entices seafood lovers with a delicious blend of tastes.
Origins of Ebi Mayo
Ebi Mayo, a delightful dish of creamy shrimp, is a great example of Yoshoku, a category of Japanese cuisine that adapts Western culinary influences. Yoshoku, meaning "Western food," began shaping Japanese menus during the Meiji era as Japan opened up to foreign influences. In the case of Ebi Mayo, traditional Japanese ingredients like mayonnaise mix with the Western concept of using creamy sauces. This fusion creates a unique dish that is thoroughly Japanese in flavor yet retains a Western culinary framework, embodying the innovative and adaptive spirit of Yoshoku cuisine.
Mayonnaise
Japanese mayonnaise and its Western counterpart have some notable differences that can influence the flavor of dishes like Ebi Mayo. Japanese mayo is usually creamier and has a more distinct tangy-sweet flavor, thanks to the use of rice vinegar or apple cider vinegar instead of distilled vinegar. It also often includes a bit of MSG, which enhances its umami depth. The choice between Japanese and Western mayonnaise really comes down to personal preference and what’s available in your kitchen. Both can work wonderfully in Ebi Mayo. You can tailor this Ebi Mayo recipe to your own tastes, keeping the recipe flexible and enjoyable for everyone.
