Japanese candied sweet potatoes are a wonderful treat anytime of year but especially in the fall when the sweet potato in season. The crunchy outer shell is glazed in a wonderful candy coating. Inside you will find an almost creamy texture. It is topped off with a sprinkle of black sesame seeds.

Instructions
- Cut sweet potatoes into bite size pieces.
- Soak in water for 5 minutes.
- Drain water and cover bowl with plastic wrap.
- Microwave for 5 minutes, until the potatoes turn yellow.
- Dry potatoes in paper towel.
- Fry potatoes in oil on medium high heat, turning individual potatoes when needed.
- Remove when crispy.
- In a pan on medium heat mix sugar, soy sauce, mirin and add potatoes.
- Make sure to evenly coat the potatoes.
- Finish with sesame seeds and serve.
