Japanese candied sweet potatoes are a delightful treat that can be enjoyed any time of year, but they shine particularly in the fall when sweet potatoes are in season. This sweet and savory snack features a crunchy outer shell glazed in a delicious candy coating, with a creamy texture inside. Topped with a sprinkle of black sesame seeds, these candied sweet potatoes offer a satisfying combination of flavors and textures.

- 2 Sweet Potatoes
- 3 tablespoon Sugar
- 1 ½ tablespoon Soy Sauce
- 3 tablespoon Mirin
- Sesame Seeds
Cut sweet potatoes into bite size pieces.
Soak in water for 5 minutes.
Drain water and cover bowl with plastic wrap.
Microwave for 5 minutes, until the potatoes turn yellow.
Dry potatoes in paper towel.
Fry potatoes in oil on medium high heat, turning individual potatoes when needed.
Remove when crispy.
In a pan on medium heat mix sugar, soy sauce, mirin and add potatoes.
Make sure to evenly coat the potatoes.
Finish with sesame seeds and serve.
