Japanese candied sweet potatoes are a delightful treat that can be enjoyed any time of year, but they shine particularly in the fall when sweet potatoes are in season. This sweet and savory snack features a crunchy outer shell glazed in a delicious candy coating, with a creamy texture inside. Topped with a sprinkle of black sesame seeds, these candied sweet potatoes offer a satisfying combination of flavors and textures.

Ingredients
  

  • 2 Sweet Potatoes
  • 3 tablespoon Sugar
  • 1 ½ tablespoon Soy Sauce
  • 3 tablespoon Mirin
  • Sesame Seeds

Instructions
 

  • Cut sweet potatoes into bite size pieces.
  • Soak in water for 5 minutes.
  • Drain water and cover bowl with plastic wrap.
  • Microwave for 5 minutes, until the potatoes turn yellow.
  • Dry potatoes in paper towel.
  • Fry potatoes in oil on medium high heat, turning individual potatoes when needed.
  • Remove when crispy.
  • In a pan on medium heat mix sugar, soy sauce, mirin and add potatoes.
  • Make sure to evenly coat the potatoes.
  • Finish with sesame seeds and serve.
