Place pork cutlets on shallow tray.
Marinate in 2 tablespoon of sake for 2 minutes.
Dry in paper towel.
Cut slits in 1” sections and poke with fork, not cutting all the way through.
Cover with plastic wrap and beat to tenderize.
Add a pinch of salt and pepper to both sides of pork.
Whip 3 eggs and add 1 tablespoon of oil.
Coat pork in flour and egg 3 times.
Coat in panko bread crumbs.
Heat oil to 300℉ and fry for 10 minutes.
Flip and cook for 4 more minutes.
Remove when color is light brown.
Heat oil to 365℉ and fry for 1-2 minutes or until golden brown.
While frying, remove bubbles and crumbs.
Serve with tonkatsu sauce.
