Tonkatsu

Tonkatsu is the classic Japanese breaded and deep-fried pork cutlet. Our tonkatsu recipe is crisp on the surface and moist and savory within.

Ingredients
  

  • 4 Pork Cutlets
  • 2 tablespoon Sake
  • Salt
  • Pepper
  • 3 Eggs
  • 2 cups Flour
  • 2 cups Panko Bread Crumbs
  • Tonkatsu Sauce

Instructions
 

  • Place pork cutlets on shallow tray.
  • Marinate in 2 tablespoon of sake for 2 minutes.
  • Dry in paper towel.
  • Cut slits in 1” sections and poke with fork, not cutting all the way through.
  • Cover with plastic wrap and beat to tenderize.
  • Add a pinch of salt and pepper to both sides of pork.
  • Whip 3 eggs and add 1 tablespoon of oil.
  • Coat pork in flour and egg 3 times.
  • Coat in panko bread crumbs.
  • Heat oil to 300℉ and fry for 10 minutes.
  • Flip and cook for 4 more minutes.
  • Remove when color is light brown.
  • Heat oil to 365℉ and fry for 1-2 minutes or until golden brown.
  • While frying, remove bubbles and crumbs.
  • Serve with tonkatsu sauce.
