  • 1 tablespoon Shiro Dashi
  • 1 teaspoon Milk
  • Pinch Salt
  • 1 tablespoon Vegetable Oil

  • Crack 3 eggs

  • Add sugar, shiro dashi, milk, and salt to eggs

  • Heat pan to medium high and add thin layer of oil. Save some of oil for later.

  • Spread and soak up oil with paper towel using chopsticks

  • Pour thin layer of egg mixture into pan

  • Spread and cook evenly

  • When egg is cooked on bottom but still runny on top begin to roll from the top of pan to the bottom

  • Push rolled egg back to the top of pan

  • Spread more oil on pan using chopsticks and paper towel

  • Pour thin layer of egg mixture into pan

  • Lift rolled egg to spread egg mixture underneath

  • Repeat 3-4 times until the egg mixture is gone

  • Remove from pan and cut into even portions
