- 3 Egg
- 1 teaspoon Sugar
- 1 tablespoon Shiro Dashi
- 1 teaspoon Milk
- Pinch Salt
- 1 tablespoon Vegetable Oil
Crack 3 eggs
Whisk eggs
Add sugar, shiro dashi, milk, and salt to eggs
Heat pan to medium high and add thin layer of oil. Save some of oil for later.
Spread and soak up oil with paper towel using chopsticks
Pour thin layer of egg mixture into pan
Spread and cook evenly
When egg is cooked on bottom but still runny on top begin to roll from the top of pan to the bottom
Push rolled egg back to the top of pan
Spread more oil on pan using chopsticks and paper towel
Pour thin layer of egg mixture into pan
Lift rolled egg to spread egg mixture underneath
Repeat 3-4 times until the egg mixture is gone
Remove from pan and cut into even portions
