Use about half or 1 lb of Daikon.
Remove the outer skin from the Daikon.
Cut the Daikon into thin slices.
Then cut the slices into thin strips.
Place the Daikon strips into cold water.
Cut the roots off the Kaiware Sprouts.
Place the sprouts in the cold water with the Daikon.
Soak the Daikon and sprouts for 15 minutes.
Cut six slices of bacon into ⅓” pieces.
Heat 1 tablespoon of vegetable oil on medium heat.
Add the bacon and cook until it becomes crispy.
Turn off the heat and add 1.5 tablespoons of vinegar.
Add 2 tablespoons of soy sauce and pepper to taste.
Remove the Daikon and sprouts from the water.
Add the bacon dressing mixture to the Daikon and sprouts.
Mix everything thoroughly.
Serve and enjoy!
