Japanese Fried Shrimp
I'm thrilled to show you how to cook Ebi Fry, or as it's known in Japan, Ebi Furai. This dish consists of tender shrimp that are panko-crusted after they are cooked until golden. A mainstay of Yoshoku, or Japanese-style Western cuisine, it is often found on menus in foreign restaurants as well as in Japan. It is usually served with tonkatsu sauce or tartar sauce. I'll also share with you a fast recipe for homemade tartar sauce that pairs perfectly with the shrimp.
Preparation
Achieving flawless texture requires making sure your shrimp are properly erect. First you cut the shrimp with exact cuts and then gently stretch them until they straighten. You will then hear a tiny popping sound. This technique keep them straight while they fry. And it also perfects their texture and makes them look better on the dish.

Ebi Fry
Ingredients
- 12 Large Prawns
- 1 Egg
- 60 g Flour
- ¼ cup Milk
- 1 cup Panko Bread Crumbs
- ¼ cup Onion
- ½ cup Cucumber
- Salt
- 2 teaspoon Vinegar
- 2 Hard Boiled Eggs
- 4 tablespoon Mayonnaise
- ½ teaspoon Ketchup
Instructions
- Peel skin and remove telson from tail of shrimp.
- Remove vein with a toothpick, by sticking it in and pulling out.
- Make small slits on bottom of prawn.
- Break muscle to straighten prawn, by laying down and pressing down with thumbs.
- Sprinkle shrimp with salt and pepper.
- Beat an egg and add 60g of flour and ¼ cup of milk.
- Dip prawns into batter without dipping the tail.
- Coat in panko.
- Combine diced ¼ cup of onion and ½ cup of cucumber with 2 teaspoon of vinegar and a pinch of salt.
- Set mixture aside for 5 minutes.
- Mash 2 hard boiled eggs.
- Drain liquid of mixture before adding it to the mashed eggs.
- Place on paper towel and squeeze water out.
- Combine mixture with mashed eggs and add 4 tablespoon of mayonnaise and ½ teaspoon of ketchup.
- Add salt and pepper.
- Add at least 2” of oil into a pot and heat to 350℉.
- Fry shrimp.
- Turn when color changes.
- Remove when cooked thoroughly.
- Plate with sauce.
